Braised Pork Belly Dong Po Rou

Welcome to Xiao’s Kitchen – A cooking channel dedicated to creating some of the world’s best Asian dishes

500g belly pork with skin
170g spring onions
40g ginger
80g cooking wine
80g light soy sauce
5g Tbsp dark soy sauce
60g rock sugar
10g light brown sugar
Salt to taste

1. Thinly slice the ginger and cut the spring onions in half
2. Boil 1 litre of water in the pan, place pork into boiling water for 1 minute, remove and drain
3. Cut the pork into 1 inch wide and 2 inches long chunks
4. Place spring onions on the bottom of a cooking pot or slow cooker, lay ginger onto the spring onion
5. Pace pork skin side down into the pot
6. Add water, ensure the water level covering the spring onions
7. Mix & add the light and dark soy sauce, cooking wine together, and then pour into the pot
8. Add the rock sugar and brown sugar, then cover the pot.
9. Place pot onto the cooker, bring to the boil.
10. Turn heat to lowest setting and cook pork for 1½ hours
11. Remove the pork from the pot and place into a bowl with skin side up, pour the juice from the pot over the pork
12. Place this into the steamer, steam for about 30 minutes
13. Remove from steamer, garnish and serve hot
