This super easy Green Detox Soup is a delicious way to enjoy some comfort food while loaded up your body with lots of nutrient density. This recipe boosts the bodies immunity and supports health, cleansing, detoxing and/or weight loss.

Red Enamel Cast Iron 5 Quart Pot:
Glass Measuring Cups:
16 Ounce Mason Jars:

1 tablespoon of coconut oil
1 chopped onion
2 medium zucchini, chopped
1 small bunch of kale, stemmed and chopped
4 cups broccoli florets
4 cups low sodium veggie broth
2 cup filtered water
1 head of garlic, peeled and roughly chopped
1 teaspoon grated ginger
1/2 bunch parsley
1/2 bunch cilantro
Kosher salt to taste

Melt coconut oil in a large pot over a medium heat. Add in onion with a pinch of salt and cook until the onion is translucent and fragrant (about 5 minutes).

Add in zucchini, kale, broccoli, veggie broth and water. Make sure that there is enough liquid to come about 1 inch over the veggies. Bring everything to a boil and then reduce down to a simmer and cook for ten minutes or until the broccoli is tender.

Turn off the heat and toss in the garlic and ginger. Pop on a lid and let the soup sit until it is cool enough to handle.

Working in batches, add the soup to a blender along with a small handful of the parsley, cilantro and little pinch of salt in each batch. Blend until creamy. Transfer the soup into a storage container or into a pot and repeat until you have blended all the soup.

*This soup will last up to 5 days stored in an airtight container in your fridge (I like to use mason jars).

*Option: I love to serve this soup with a swirl of coconut milk over the top.

Makes 10-12 cups of soup.

Mmm looks yummy for sure! You can never go wrong with garlic and ginger. And cilantro, of course!

Saï Jones Rajopadhye says:

For anyone following a #lowFODMAP diet, I adapted this recipe. I used leek greens instead of onion and garlic, only used broccoli florets (not the stems), and used low FODMAP homemade broth. Also added half a jalapeño and some other spices for some kick! Thanks Dani!!

Rachel Gordon says:

I love my immersion blender for soups like this

Yummy. I love blended soups and never thot of putting in parsley and cilantro fresh at the end. Thanks can't wait to try it

Andrew Chahu says:

Thank you for the recipe. I'm definitely going to try this soup however could you please, please not use words like "detox' or "cleanse" as they make people think they have "toxins" that they need to get rid of. There is no scientific evidence to support any of those detox or cleansing diet/fads/supplements. The human body is amazing at getting rid of any unneeded chemicals or poisons (some of which the body naturally produces) and no special food or diet would help the kidneys or liver work any better. If they don't work properly it's called kidney/liver failure. Please for the sake of those who watch your videos don't use those words as they are incredibly misleading. Thank you,
yours truly, a long time fan of your videos,

Beatriz Palacios says:

Very interesting recipe. What could one use instead of kale? Its unavailable where I live (Venezuela )

Vicki Davidson says:

What do you think about adding some full fat coconut milk to the soup? Also can I use my immersion blender?

lizrael says:

The soup is full of healthy ingredients. Thank you! But there is no scientific proof that any food can "cleanse" or "detox" you. Why make such claims?

ISayToMyself says:

This looks lovely and easy. I will be doing this!!!! Thank you.
