Spanish Rice made with white rice: http://www.cooking-mexican-recipes.com/spanish_rice_recipe.html

This is my healthy version for Spanish rice as it is made using brown rice and olive oil.

This makes for a hearty and delicious spanish rice recipe. When using brown rice you have to use more liquid (chicken stock) and cook the rice longer because brown rice is less processed than white rice.

Also if you want to make this dish vegetarian, you can substitute vegetable broth for the chicken broth.

Brown Spanish Rice Recipe

Ingredients:
2 cups brown rice
3 3/4 cups chicken broth
1 1/4 cups tomato puree
2 tsp. garlic powder
2 tsp. salt
1/4 tsp. chile powder
1/2 bell pepper
1/2 yellow onion
1/4 cup olive oil, maybe a little less
1 Tbsp. butter

Ingredients:

Heat a frying pan over medium high heat. Add the oil and butter. Once melted, add the rice and sauté for about 5 to 8 minutes until the rice brown up even more!

Add the onion and bell pepper and sauté for an additional 5 minutes stirring frequently.

Heat up the chicken broth on the stove in a pan (this is optional). The reason to do this is to prevent splatter when adding it. It splatters when you add cool broth to a hot pan full of rice, oil and veggies.

Next add the tomato puree, salt, chile powder and garlic powder and stir to combine.

Turn the temperature up to high and stir frequently. Once you have a full boil turn the temperature to simmer and cover and cook for about 50 minutes or until the rice has absorbed all the liquid and rice is soft.

I have been looking for so long for a good Spanish rice recipe that uses the brown rice! I had been wondering about if I should try "browning" the brown rice in oil as I always do with the white rice. I had not thought about adding butter too, but that makes sense to get it browner. By far the best brown rice recipe I have found. Followed your directions and added red peppers and jalapenos. My cook time was only around the 40 minute range and the rice came out fluffy and delicious. Tip to anyone making this: DO NOT SKIP THE BROWNING PROCESS. The added oil made all the difference in the cooking process.

Add olive oil to a large pan and heat to medium-high. Add the butter, if using, and allow to melt.

Pour the brown rice into the pan and stir thoroughly to coat. Stir constantly for about five minutes, or until the rice is nicely browned and toasted.

Add chopped onion and bell pepper and continue to sauté, until the vegetables are translucent.

Add remaining ingredients, raise heat, and bring the mixture to a boil. Cover; lower heat to a simmer; cook for 40-50 minutes.

Thanks Rock'in Robin!! Great recipe! I do want to mention though the difference between short grain brown rice and long grain. Short grain requires 2 cups liquid to one cup rice and long grain requires 2 1/2 cups liquid to one cup. My favorite tip of your clip was the warming of the broth before adding to the pan!! I was hoping your brown Spanish rice would have been light & fluffy like my Spanish rice made with white rice. I don't buy white rice anymore unless I'm making Spanish rice for other people. When I make Spanish rice with brown rice… it's just not light and fluffy and it bothers me. I would use Fresh Garlic though (minced) & I like your idea of roughly chopping the onion & bell pepper, I would have chopped them down more & I think that may work against me. I guess No Light & Fluffy with Brown.
